Italian Green Sauce Recipe

My kitchen garden parsley grew beautifully this year.
And so as winter approached, I had plenty of it left and ready to be harvested.
Something I love to do at the end of a growing season is to make sauces out of herbs.
There’s something really wonderful about being able to pull garden grown sauces out of your freezer during the gloomy winter months. It truly brings me so much joy.
And I have found that meals are so much easier to make when you have some sauces already on hand.
With my kitchen garden parsley harvested along with some chives I had grown as well, I decided to make this Italian Green Sauce.
I spent a couple weeks in Tuscany this fall, and I kept seeing this sauce on store shelves.
I knew I had to make it for myself!
Now, there are many variations of this sauce . This recipe is what I have found to have the best flavor, but I encourage you to make it your own!


Italian Green Sauce
Equipment
- Food Processor
Ingredients
- 2 Garlic Cloves
- 1 tbsp Dijon Mustard add more to taste
- 3 tbsp Red Wine Vinegar
- 1/2 cup Extra Virgin Olive Oil
- 2 tbsp Capers in Brine
- 2.5 cups Fresh Flat-Leaf/Italian Parsley
- 1 bunch Chives
- 1/2 Shallot
- 1/2 Lemon, Juiced
- Salt & Pepper to taste
Instructions
- Roughly chop the parsley.
- Add all ingredients to a food processor and pulse until it is a sauce-like consistency.
